Max lands dream job at Le Manoir

A CATERING student from Romsey has won a dream apprenticeship at world-renowned chef Raymond Blanc's flagship hotel in Oxfordshire.

After studying in the hospitality department at Brockenhurst College, Max Fillaut, aged 19, is shortly due to begin working at the two Michelin-starred Le Manoir aux Quat' Saisons restaurant and hotel, at Great Milton, Oxford, after completing a week's induction.

The apprenticeship is a result of M Blanc's visit to the college in November when he presented students with awards for outstanding achievement in the hospitality department.

Max spoke to Raymond Blanc and the celebrated chef invited the eager student to write to him explaining why he would be a suitable recruit.

Max said: "I was so excited by the opportunity that I sent M Blanc a letter as soon as I could. I was then invited to do a two-day trial at his restaurant.

"I was thrown in at the deep end and was preparing starters for the two days. On the second day, I had to prepare a vegetarian dish using the ingredients available.

"Although I was nervous, I thought about what I had learned at college and created a pasta dish. They really liked it and offered me the job at the end of my trial period. I am raring to go and can't wait to start.

"My course has really helped me to become confident in the kitchen, and the hospitality department's links with people like M Blanc has helped me to achieve this dream job."

John McArthur, head of hospitality studies at the college, said: "Max always goes the extra mile and has always been eager to extend his knowledge. He is a very cheery person and I am sure he will do very well."

Mr McArthur added that he had recently spoken to staff at Le Manoir aux Quat' Saisons and they were very impressed with his confidence and ability.
